Palm-sized and fits in a cooker.
An outdoor cooking knife based on the concept of a "foldable kitchen knife."
The younger sibling of a folding kitchen knife that raised over 8 million yen in crowdfunding.
A compact knife you'll want to take with you on mountain hikes and solo camping trips.
POINT 1
Easy to cut despite its small size
Based on the concept of a "foldable kitchen knife," this is a compact knife that is easy to cut with, maintaining the shape of a folding kitchen knife while prioritizing portability and achieving the maneuverability of a kitchen knife.
To prevent losing it due to its small size, it comes with a brass lanyard hole that allows you to hang it from your neck or bag.
POINT 2
Easy to maintain structure
① Easy to sharpen
Unusually for a knife, it uses the same blade angle as a kitchen knife, so you can easily restore its sharpness with a commercially available kitchen knife sharpener, which is a nice bonus.
② Easy to clean
One weakness of folding knives is the difficulty of maintaining the interior when the blade is folded. However, the Yama-meshi knife has a very simple structure. You can easily maintain it by loosening the screws with the included flathead screwdriver and removing the handle. This prevents meat scraps from remaining inside after preparing meat or fish.
③ Easy to adjust
A common issue with folding knives is that it's difficult to adjust the blade's opening and closing. The blade can be too stiff to deploy or retract, or conversely, too loose and wobbly.
But with this knife, you can easily adjust it with just one screwdriver.
The secret lies in the spring hidden between the blade and the handle!
Tightening the screw engages the spring, making the opening and closing stiffer, while loosening it allows for smoother movement. It's an innovative structure that allows you to adjust it to your preferred stiffness.
When in use, you can smoothly open the blade by pressing the protrusion called "chikiri" with your thumb.
POINT 3
"Ultimate Sharpness" finished by Japanese craftsmen
To ensure it can be used for a long time as an essential tool in daily life, high-quality materials were selected. It features a wooden handle that develops character with use and a blade that remains fully usable even when worn down and narrowed.
This is achieved with "Gingami No. 3" stainless steel, favored by professional craftsmen.
While there are many types of stainless steel, "Gingami No. 3" is not only rust-resistant but also possesses the same hardness and sharpness as "Shirogami" steel, which is designed for chefs. It is highly regarded by chefs who handle acidic ingredients like vinegar and citrus.
Diverse handle lineup
Plain
A simple plain model, expressing a cute broad bean-like form. The material, Ipe, is a hardwood native to South America, used for wooden decks in ports and quays due to its strength to withstand heavy foot traffic and high durability even in harsh conditions where it is exposed to water. It is heavy and dense, characterized by its substantial texture.
Plain Black
The Black series uses black laminated reinforced wood as its material. Thin sheets of natural wood are impregnated with resin, layered, and compressed at high temperature and pressure to achieve high strength. While being resistant to moisture and highly water-repellent, it has a good texture and is easy to grip.
Naguri
The handle features "Naguri" processing, which leaves chisel marks on boards and pillars with an adze. We used machine processing to express this dynamic form passed down from ancient Japan. The material used is Ipe.
Naguri Black
Uses black laminated reinforced wood. "Naguri" is an ancient Japanese processing technique that leaves chisel marks on boards and pillars with an adze, creating a dynamic atmosphere. It has been reproduced on the knife handle using machine processing.
Multi-color
This model uses boards made by laminating thin, vibrantly dyed sheets and then cutting them across the grain. Each piece is crafted with time and effort. The colorful stripes create a lively impression, making it a beloved model that adds a stylish accent to your campsite.
Ripple Black
